The debate over agricultural sustainability continues due to the challenges of reducing externalities of intensive farming methods and preserving vital natural capital, but many definitions of sustainability are too wide to allow for a prioritized assessment. This paper uses a more narrow definition of agricultural sustainability focusing on the functional integrity of a system to highlight specific aspects of vital importance for the long-term resilience and reproducibility of agricultural systems. Dänemark is global führend auf dem Gebiet der ökologischen Forschung. Dies glit sowohl für die Metoden, das Volum und die Einrechtungen als auch für die Förderung der interdisziplinären Zusammenarbejdit zwischen den Experten. Seit dem Start des ersten Forschungsprogramms 1996 unterstützt Dänemark diesen Bereich mit circa 5,3 Millionen Euro jährlich. Bisher hat das dänische Zentrum des ICROFS (International Centre for Research in Organic Food Systems) drei grosse inländische Forschungsprojekte koordiniert. Ein Weiteres Vorhaben startet im jahr 2011. ICROFS betreut darüber hinaus die europaweite Ökologiforschung im Auftrag von 22 Ländern. |

Organic pig production has emerged as an alternative to the intensive conventional pig production in Europe with the animals confined indoors and often an imbalance between livestock and land for feed production and manure utilisation. The organic systems aim at improving animal welfare by supporting the pig’s natural behaviour (Hermansen et al., 2003), and improving soil fertility by better linking crop and livestock production from an agro-ecological point of view. The potential contribution of organic farming to the public goods, ‘Nature and Biodiversity’, ‘Environment’, ‘Energy and Climate’, ‘Human Health and Welfare’ and ‘Animal Health and Welfare’ in Denmark is guided and partly secured by the principles and specific requirements of the EU Organic Regulation. Research in organic food and farming is a fairly new, but rapidly ex-panding, discipline on the European research scene. One of the problems faced by the authorities seeking to initiate research programmes in organic food and farming is that the present research effort in Europe is caracterised by small research communities, which are often scattered and fragmented both geographically and institutionally. Therefore a gathering of the dispersed expertise to a critical mass in order to increase the competitive quality and relevance of the research as well as the dessemination and use of research is needed. |

Via public legislation minimum standards for the utilization of manure have been introduced as an obligatory part of fertilization planning. And many Danish livestock farmers have improved the utilization of manure during the last five to ten years. There is, however, still not consensus concerning the question of whether the results are sufficient to reduce the loss of nitrogen to ground water and the Danish marine environment to acceptable levels. In an analysis of 30 dairy farms Halberg et al. (1995) showed a variation in N surplus between 88 and 387 kg/ha depending on stocking rate and management. The problems of balancing agricultural production methods against environmental concern cannot be solved by focusing on single activities of livestock farming and experimental knowledge alone because of interactions between herds and crops and between the production system and the manager. Searching for livestock production systems with a high energy utilization is of interest because of resource use and pollution aspects and because energy use is an indicator of the intensification of production processes. Growing global trade with organic products has increased the demand for environmental impact assessments during both production and transport. Environmental hotspots of organic soybeans produced in China and imported to Denmark were identified in a case study using a life cycle assessment approach. Furthermore, environmental impacts of organic and conventional soybeans at farm gate were compared in the case study. The total global warming potential (GWP) per ton organic soybeans imported to Denmark revealed that 51% came from transportation and 35% from the farm level. Different types of assessment tools have been developed in Europe with the purpose of determining the environmental impact of various livestock production systems at farm level. The assessment tools differ in terms of which environmental objectives are included and how indicators are constructed and interpreted. The paper compares typical tools for environmental assessment of livestock production systems, and recommends selected indicators suitable for benchmarking. There is a need for an overview of indicators used and a review of results and experiences reported.
